Fail-Safe Homemade Mayonnaise

How many of you buy mayonnaise from a shop? Most I bet and, but have you ever thought about making your own? Nothing beats homemade mayonnaise if done properly, it is chemical free and a cheaper than supermarket mayonnaise.

So, here is the fail-safe recipe that you can try at home and surprise the family:

Ingredients:

• 2 medium sized egg yolks
• 1 level teaspoon salt
• ½ teaspoon mustard
• ½ teaspoon caster sugar
• A pinch of cayenne pepper
• 4 to 5 teaspoons lemon juice or white vinegar
• 1 ½ cups oil (olive or sunflower)
• 4 teaspoons hot water

Method:

Take the yolks, salt, mustard, sugar, cayenne pepper, and 1 teaspoon of lemon juice in a small and beat with a wire beater until very thick. You can use an electric mixer set on a medium speed as an easier alternative method for whipping. Slowly dribble ¼ cup oil whilst whipping vigorously throughout.

Whilst still whipping, add 1 teaspoon of lemon juice and 1 teaspoon of hot water. Then put another ¼ cup of oil still whipping.

Whip in another teaspoon each of lemon juice and hot water. After this add ½ cup oil slowly poured in still beating constantly. Finally, mix in remaining lemon juice and water and slowly beat in the rest of the oil.

You can make thinner mayonnaise by adding hot water.

To store you need to put the mayonnaise in a sealed container and refrigerate until needed. It will keep up to two weeks

More tips to ensure a fail-safe mayonnaise

• Ingredients should all be at room temperature (except the hot water of course)

• If the oil and the yolk do not mix properly, whip in a teaspoon of hot vinegar

• If it fails get another bowl, separate another egg yolk and use the failed mixture instead of oil. Adding it very slowly and with care

Grow You Own Lettuce For Salads - it's Easy

Lettuce is great for salads and with spring here an ideal time to grow you won. A good way to use this system is to grow the seeds in cardboard egg boxes, which can then be transferred into another place without disturbing the roots, and the cardboard with decompose by the time it has been harvested. • Lettuce like warm sunny places, so make sure the final position of your lettuce is in an environment that has these conditions for the best lettuce results. What lettuce doesn't like is excessive heat and lack of water.

• Pests can be a problem, slugs, snails and birds etc. I don't have a problem with this and don't use anything else other than a nylon netting cover to deter birds and check the lettuce every day in the morning and evening handpicking slug and snails that leave an obvious trail. I do not use poisons although many people do.

• Buy lettuce seeds locally, they will have varieties that are suitable for your region.

• The soil needs to be able to retain moisture yet have enough drainage to prevent standing water. With this you are sure to get good crops from most types of soil. If you had planted the seed originally in compost based soil this will give the roots a good start before growing on.

• Sow batches of seeds every two weeks, that way you will extend the harvesting times and have table ready lettuce for an extended period.

If you haven't tried growing lettuce before, have a go it's as easy as growing grass you'll never look back once you have tasted your own home produced salads.

Tips On Ear Health

Ears and their health generally look after themselves. What advice do you need to know to keep your ears in fine health indefinitely? Well here are some good bits of information to help the health of your ears remain in tiptop condition.

Newly pierced ears are prone to infection so always wash your hands before touching tem at this stage. Applying alcohol also regularly will also prevent bacteria forming. This can be done with a little cotton wool applying it to both sides of the ear and then rotating your earring to circulate the alcohol.

When water gets stuck in your ear canal, perhaps from swimming this can irritate the skin as bacteria has got hold. Always dry your ears after swimming and give your head a good shake to remove any water that may have got into your ears.

The sun and sunburn is a major problem for ears, always wear a hat and rub some suntan lotion on your ears. In the cold of winter keep your ears covered up with a hat or headband.

There isn't much more that you need to know to keep your ears healthy apart from avoiding excessive loud noise. Always try and block yourself away from this as it can lead to partial or total deafness later on.

Plastic food containers are a passion of my mine. I know you are saying that plastic is not good for the environment and we should use recyclable products instead. Well think again.

If we all did the tips above the amount of energy and waste would be tremendous and might even warrant lower bills with the savings the hotels save!

I suppose having been married I can call myself an expert on what makes a marriage work. Too many divorces, marriages that are living hell and the ones that suffer the most are the children. It is up to the married couple to make sure their marriage remain happy not just for themselves, but for the new generations they bring up in this difficult world.

With my 28 year of experience being married I know what makes it work so I have given 6 tips which will certainly go a long way into helping a marriage last forever.


TIP ONE
Everyone gets angry and when you are angry the worst thing that can happen is to argue with someone else who is also angry. If you see your partner angry don't be and vice versa. One of you have to act as the calming element, it works both ways.

TIP TWO
Throughout a marriage there will be differences of opinion. When you disagree with what your partner is saying or doing it doesn’t matter who is right or wrong, talking and more important giving time to listen to each other is important. If you still both disagree then agree to disagree calmly.

TIP THREE
The worse thing a partner can do, apart from having an affair is to keep bring up things you have done wrong in the past. Dwelling on these really will grind a partner down. If there needs to be a reminder of bad things or mistakes in the past then just make a fleeting reference to it and use is as a positive experience and learning curve taken on board for a brighter future.

TIP FOUR
You married your partner for a reason and that reason is love. you know what you love about your partner so once a day make a point of telling them why you love them. This will go a long way to reminding each other why you are together. Sometime over a period this is forgotten so if you make a habit of saying it really will sink in again.

TIP FIVE
Give each other space. you are married and should be sp[ending the rest of your lives together, don't crowd your partner 24/7. Everyone needs a little time and space away from each other no matter what anyone says. Even if it is a weekend apart it will keep your wanting each other very much alive.

TIP SIX
The last tips is to be yourself and individual, don't try to be anything else. This may sound strange, but some marriages don't find out the real person they have married until the acting becomes too tiring and the marriage breaks down as that person changes.

Look at your marriage right now and see whether any of these tips are being used. If you are relatively newly married then you probably won't need to follow some of them. Over a longer duration they should all be used as an aid and support a much happier relationship.
