Fail-Safe Homemade Mayonnaise

How many of you buy mayonnaise from a shop? Most I bet and, but have you ever thought about making your own? Many have tried but have been put off with failure, I myself have ended up with a complete mess until I found a neighbour who gave me a tip on how to succeed every time. Nothing beats homemade mayonnaise if done properly, it is chemical free and a cheaper than supermarket mayonnaise.

So, here is the fail-safe recipe that you can try at home and surprise the family:

Ingredients:

  • 2 medium sized egg yolks
  • 1 level teaspoon salt
  • ½ teaspoon mustard
  • ½ teaspoon caster sugar
  • A pinch of cayenne pepper
  • 4 to 5 teaspoons lemon juice or white vinegar
  • 1 ½ cups oil (olive or sunflower)
  • 4 teaspoons hot water


Method:

Take the yolks, salt, mustard, sugar, cayenne pepper, and 1 teaspoon of lemon juice in a small and beat with a wire beater until very thick. You can use an electric mixer set on a medium speed as an easier alternative method for whipping. Slowly dribble ¼ cup oil whilst whipping vigorously throughout.

Whilst still whipping, add 1 teaspoon of lemon juice and 1 teaspoon of hot water. Then put another ¼ cup of oil still whipping.

Whip in another teaspoon each of lemon juice and hot water. After this add ½ cup oil slowly poured in still beating constantly. Finally, mix in remaining lemon juice and water and slowly beat in the rest of the oil.

You can make thinner mayonnaise by adding hot water.

To store you need to put the mayonnaise in a sealed container and refrigerate until needed. It will keep up to two weeks

More tips to ensure a fail-safe mayonnaise

  • Ingredients should all be at room temperature (except the hot water of course)
  • If the oil and the yolk do not mix properly, whip in a teaspoon of hot vinegar
  • If it fails get another bowl, separate another egg yolk and use the failed mixture instead of oil. Adding it very slowly and with care

There is no way that homemade mayonnaise can fail with all this on board. ENJOY!
